The making of my mom's famous Spinach and Egg casserole. It sounds horrific, but it really is phenonomenal. Annnd, I made it (quasi) dairy-free. First you make the thick bechamel-type sauce which I made with Hazelnut Milk. Andy asked, "How do you milk a hazelnut?" and Wayne told him "Verrry carefully". =) So, the sauce has Hazelnut milk (or regular milk), flour, lots of butter and cayenne pepper.

Annnd, voila! =) Heart-attack in a casserole dish. No, it can't be that bad if I used hazelnut milk and olive oil "butter". (the 2 cups of cheddar cheese and bacon might negate that...)

Our Irish Easter Feast! Andy was verrry busy. He even made us an apple/blackberry crumble pie! (not pictured, but...yummy)
